    Roasted Eggplant Spread

    This delicious Roasted Eggplant Spread comes together effortlessly with the "Dip" function on the nutribullet Triple Prep. 

    Ingredients

    • 3 tbsp olive oil
    • 3 garlic cloves 
    • 1/2 teaspoon salt
    • 1/2 teaspoon pepper
    • 2 large sweet red peppers, roasted
    • 1 medium eggplant, roasted
    • 1 medium red onion, roasted
    • 1 tbsp tomato paste
    • toasted baguette slices, to serve 

    Directions

    1. Transfer all ingredients (excluding toasted baguette slices) to the Food Processor Bowl of the nutribullet Triple Prep System
    2. Select "Dips" function 
    3. Transfer to a dish and serve with toasted baguette slices
