This delicious Roasted Eggplant Spread comes together effortlessly with the "Dip" function on the nutribullet Triple Prep.
Ingredients
- 3 tbsp olive oil
- 3 garlic cloves
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2 large sweet red peppers, roasted
- 1 medium eggplant, roasted
- 1 medium red onion, roasted
- 1 tbsp tomato paste
- toasted baguette slices, to serve
Directions
- Transfer all ingredients (excluding toasted baguette slices) to the Food Processor Bowl of the nutribullet Triple Prep System
- Select "Dips" function
- Transfer to a dish and serve with toasted baguette slices
