    Pineapple Salsa Verde

    This tangy, sweet, and spicy salsa is guaranteed to freshen up your next fiesta.

    Ingredients

    • 2 × 400g cans tomatillos, drained (about 3 cups)
    • 2 jalapeños, deseeded for mild heat (add another if you like it spicy)
    • 4 garlic cloves
    • 1 cup packed fresh coriander leaves
    • ½ medium red onion, quartered
    • 2 tbsp lime juice
    • 2 tsp salt
    • 1 tsp ground black pepper
    • 2 tsp garlic powder
    • 2 tsp onion powder
    • 1½ cups fresh pineapple, roughly chopped

    Directions

    1. Add the tomatillos, jalapeños, garlic, coriander, onion, lime juice, salt, pepper, garlic powder, and onion powder to the blender. Blend on Low for about 20 seconds, until mostly smooth.
    2. Add the pineapple chunks and pulse about 7 times, or until the salsa reaches a chunky consistency. For a smoother salsa, continue pulsing until the mixture reaches your desired texture.
