Rocket and Cashew Dip

Serves 4

Get out your mozzarella sticks, sliced French bread, meat slices, tortillas, carrots, cucumbers, the whole spread! - because this Rocket and Cashew dip will get your taste buds prancing. Hand blended using the new Nutribullet Immersion Blender, this healthy dip adds a bit of spice, along with the added crunch of cashews 🤤

Ingredients

  • 60g fresh rocket
  • 1/cup fresh basil leaves
  • 1/4 cup unsalted cashews
  • 1/cup red chilli, roughly chopped
  • 2 garlic cloves, peeled
  • Juice & rind from 1 lemon
  • 1/4 cup olive oil
  • Pinch of salt and pepper

Toppings

  • Unsalted cashews
  • 1/red chilli, sliced
  • Olive oil 

Directions

  1. Place the rocket, basil leaves, unsalted cashews, red chilli, garlic cloves, lemon rind, lemon juice, olive oil and salt and pepper into the Nutribullet Immersion Blender 600ml Chopping Bowl and proceed until mixture is almost smooth
  2. Transfer mixture to a serving dish. Top with cashews, red chilli and drizzle with olive oil.
